Tasting notes (Scribbles)
Nose: A rich and full nose with vanilla, sugar powder coated hard fruit candy, cinnamon and a hint of menthol. There’s a nail polish remover note surrounding the edges.

Mouth: Very spicy and powerful yet fruity, with apples and cherries being easily found. It’s astringent and the oak note comes with a coffee note mixed with some vanilla. A hint of cinnamon shows up in the background.

Finish: Cinnamon, menthol and dry oak. Very astringent. The taste of those hard fruit candies show up in the background and confirms the nose. It really packs a punch and keeps on giving for a long time.

Additional information
This is a straight bourbon aged for 6 years, 3 months and 14 days. It’s a Jim Beam product and the batches is limited and selected by a roundtable panel. It’s named after Kathleen DiBenedetto, who was involved in launching the Beam small batch releases in the 90’s and still works for Beam Suntory as a Senior director.

Jim Beam Black – Extra Aged

Tasting notes
Nose: This is sweet and fruity. At first there’s a vanilla heavy sweetness and apple flavoured hard candies. It’s very mild. When it settles there’s an immidiate oakiness mixed with brown sugar and with sweet liquorice in the background. A hint of cinnamon floats around as well. This is a good nose. It’s very straight forward and pleasant yet it lacks power and complexity.

Mouth: It starts out with a mix of oak spices and some spicyness from the ethanol. It’s less sweet on the palate and the fruit candy is not as pronounced and it feels a bit pointy and unbalanced. The oakiness soon doubles down and overrun most of the flavours which adds to the unbalanced character. The vanilla is still there and a hint of anise replaces the sweet liquorice. It feels a bit more herbal overall.

Finish: The transition is mild and the apple flavoured hard candy returns. It then flips to heavy oak with a lot of oak spices. The distillate feels a bit harsh which isn’t all that great. The oak takes over completely and the finish is basically like chewing on a piece of oak. This is a good bourbon overall but the base flavours doesn’t seem to stand up to the oakiness.

Additional information
Up until 2015 this had an 8 YO age statement and was called ”Double aged”. Now it’s supposedly about 6 years old, but no age is presented on the bottle. The mashbill consists of 77 % corn, 13 % rye and 10 % malted barley.

Knob Creek – Small Batch

Tasting notes
Nose: This is sweet and vanilla rich. At first there’s a layer of rich vanilla mixed with green apples and cherries. A small note of nail polish remover floats on top. When it settles the honey sweetness becomes more pronounced and and a slightly dusty oakiness arrives. It’s very aromatic. There’s a chalk note in the background as well. This is a great nose with a lot to offer.

Mouth: It starts out very mild with the fruity notes up front. It comes through as assorted hard fruit candies with powdered sugar. There are notes of cinnamon, vanilla and corn in the center and a hint of a herbal, slightly bitter background note which creates a nice contrast to the sweetness. A fresh oak with a hint of pecan nuts and hazelnuts coats the mouth. Anis, liquorice and a general rye note surround the edges.

Finish: A small burst of peppermint leads way but turns over to a mix of the fruit candies and rye spices. The oak is very pronounced and leaves a dusty note in the back as well as a dry sensation over the palate. The character follows along quite a bit down the line which is nice. In the end all that’s left is a dusty oakiness. This is a great Bourbon. It feels balanced and has a nice journey throughout.

This small batch straight bourbon is made to replicate bourbon as it was before prohibition. It’s made from a mash bill consisting of 75 % corn, 13 % rye and 12 % barley. It’s aged in heavily charred barrels to create a fuller flavour.

Tasting notes
Nose: This is sweet and mellow. It starts out with a vanilla heavy oakiness and a shiny distillate note. When it settles there are notes of rye bread and mild sweet liquorice added as well as a hint of menthol floating around on top. Brown sugar, apples and a hint of banana mix with cinnamon to make a nice center part. This is a good solid nose overall. It’s not complex and very easy to access.

Mouth: It starts out with a very mild vanilla before spicyness from the oak arrives. There’s a menthol layer on top, a hint of dusty corn and a coffee note forming in the center while the sweet flavours are on the outside. It’s a bit spirity and shiny overall. There’s still a rye bread note floating around as well. The oakiness is increasing with time but everything is a bit muted due to the low ABV.

Finish: The fruity notes return and surge through the transition. The oakiness and coffee notes remain as well and make up a big part of the finish. It doesn’t take long before the shiny and spirity notes become metallic and moves back. The late finish revives the liquorice but it’s not as pleasant as on the nose. A hint of brown sugar lives on as well. The oakiness keeps a nice level throughout the late finish. This is a standard Bourbon which gives a decent amount of space to the rye notes. It’s low proof and a bit spirity, but it’s easy to drink.

Additional information
Four roses uses 5 different yeast strains to create 10 different mash bills. The yellow label is their stock expression and is usually made up by a mix of 8-10 of the mash bills. The content’s age varies from 4-12 years old. The char level used is between #3 and #4.

Peach Street Distillers Colorado Straight Bourbon – Limited Release Single Batch

Tasting notes
Nose: Green apples, chalk, nail polish remover, honey, anis (or maybe liquorice root) and a hint of vanilla. The rye note really shines through.

Mouth: Honey, vanilla, cherries, cinnamon, oak, cooking spices and anis. A hint of caramel lurks in the background.

Finish: Spicy with cinnamon and honey. The oak is dry with some astringency. Rye flavour is dominant through and through with anis and liquorice at the forefront. A nice collection of assorted nuts can be found within the lingering oak flavour.

Additional information
This bourbon is aged between 2-5 years. Each batch yields 3 barrels. It’s made from 60 % local Colorado sweet corn, 20 % rye and 20 % malted barley.

Jim Beam Double Oak

Tasting notes
Nose: This is sweet and oaky. At first there’s a vanilla rich oakiness surrounding a sweet and slightly dusty center part. There’s a nail polish remover note within and a minty note floating around on top. When it settles there’s a small liquorice note floating around, as well as tiny bread note. The vanilla rich oakiness really comes through as a nice frame to the whole. This is a nice nose. It’s an easy to access Bourbon with a lot of classic characteristics.

Mouth: It starts out with a very soft mix of cherries, oak and vanilla. The oakiness is really strong and makes everything a bit astringent and dries out the palate. Underneath it feels a bit rough and ethanol heavy, even though it’s very mild. The loquorice note pushes through after a while, but everything just gets overrun by the vanilla oakiness. It becomes slightly bitter in the back and the minty notes still floats around on top.

Finish: The tranisiton is the best part of the journey. There’s a mix of oak spices and black pepper increasing the spicyness and brings the vanilla and cherry notes with it for a short period before the heavy oak returns once again. The dust and a corn note also appears shortly before the oak and the liquorice notes takes over. The late finish is a bit too oaky and feels very unbalanced. It does deliver on its double oak promise. This is a good bourbon which delivers quite well on the set premises. It should work well in cocktails.

Additional information
This version of Jim Beam was released in 2016 and is aged for 4 years, then put into new barrels for some time to create extra wood flavours. The mashbill consists of 75 % corn, 13 % rye and 12 % malted barley.

Tasting notes
Nose: This is rich and spicy. There’s anise and cinnamon and a dry oakiness. A fruitiness with mainly cherries and green apples sit together with a dusty corn note in the middle with a veil of nail polish remover surrounding it. Honey and vanilla creates a base giving the nose depth. It feels very well balanced. It’s very pleasant in the nose.

Mouth: It starts out with honey up front with cinnamon and rye spices peeking through. The fruitiness is still filled with cherries and green apples. The oak is very dry and somewhat astringent. A bitterness slowly builds up and the anise becomes more pronounced. The cherries move forward together with the rye spices.

Finish: A layer of menthol spreads out in the mouth before the oak and a dusty corn note take lead. There’s liquorice root, honey and vanilla. Those flavours stay on the sides of a freshly cut oakiness. It’s still dry and the astringency stays a long time after everything else have subsides. There’s a hint of coffee coming through in the lady part of the finish. This is a very well balanced bourbon.

Additional information
This is a barrel proof bourbon made from whiskey aged between 6-12 years in alligator charred (#4 char, 55 sec.) barrels. The mash bill consists of 75 % corn, 13 % Rye and 12 % barley.

Rebel Straight Bourbon Finished in Tawny Port Barrels

Tasting notes
Nose: This is sweet and oaky. At first there’s a big vanilla and fresh oak sweetness with a side note of sweet dark fruits. There are raisins and candy cane mint sitting together with a caramel note which adds to the sweetness. There’s also a nail polish remover note floating around on top. The port feels really integrated in the experience and the whole comes through as very balanced. It doesn’t create any complexity though. This is a very good nose overall.

Mouth: It starts out with a brown sugar sweetness up front with a cherry and raisin fruitiness in the back. The oakiness, and spices deriving from it, emerges from the back. There are notes of vanilla, corn and caramel as well. It feels quite metallic in the back which brings it down a bit. It feels quite complex and there’s a nice mix inside which gives some coffee notes and some ripe fruit notes.

Finish: The finish starts out with a surge of candy cane mintiness and fresh red berries with cherries at the forefront. The transition is amazing. Vanilla and oak are added and the spicyness comes with it as well. The ripe notes and coffee are still in the back. The longer the finish goes, the more of the oak and the coffee comes through. Dark chocolote is added. The late finish is just the fresh oakiness running out its course. This is a great bourbon with a finishing period which matches the character in a balanced and delicious way.

Additional information
This straight bourbon is s limited release of 6000 bottles and is the third annual special release. It was aged for more than 4 years and then finished for 6 months in ex-Tawny Port Casks.

Wild Turkey Rye

Tasting notes
Nose: This is sweet and minty. At first there’s a minty cloud sitting on top of sweet vanilla and anise. It’s very mild and easy to approach and never really seems to change. The mint becomes slightly sharper over time in the glass and it becomes more pepperminty. The oak is peeking through out on the edges and there’s a slightly spirity note pushing through in the center. This is a decent nose. It’s not especially interesting nor complex. It lacks a lot in power and body though.

Mouth: It starts out very flat and it’s way too mild. There’s a brown sugar sweetness which soon is joined by the vanilla, mint and anise. There’s a tiny marzipan note in the back but when the tiny spicyness start to arrive it brings the peppermint forward. The oak is still out on the edges and the middle becomes slightly fruity with time. It’s a green apple kind of fruitiness, but it’s not especially specific.

Finish: The transition is very straight forward. A small increase in peppermint is there but otherwise it’s just a continuation of the other flavours. Everything drops quite fast though and the finish is mostly a new sawdust oakiness with a minty overlay. This is a decent whisky. It’s way to flat and boring but it delivers an extremely easy approach and decent flavours.

This rye is aged for at least 5 years in barrels with No. 4 ”alligator” char. The mashbill consists of 51 % rye, 37 % corn and 12 % barley.

Evan Williams Extra Aged

Tasting notes
Nose: This is sweet and rich. There’s a heavy dusty corn note in the middle with vanilla, honey and liquor soaked cherries surrounding it. There’s a menthol note laying on top together with a hint of nail polish remover. The oak is kind of binding everything together and almost disquise itself. The honey note moves forward with time in the glass.

Mouth: A sour lemon note and some chili fruit spicyness arrive first. The vanilla and honey sweetness both take a step back. There’s a chalky note on top of the dusty corn. Beneath, it’s fruity with cherries and a hint of ripe bananas. The oak is still residing in the background. It brings a little bitterness to the mix, which makes the whole thing more interesting than if it was more dominant. There’s a tiny amount of the rye coming through (with mainly anis) within the spicyness. The whole thing is very corn dominant though.

Finish: The dusty and chalky notes flare up and together with the fruity and sweet notes it soon dies down. The oak takes a huge step forward. It’s a fresh, new cut rough oakiness. There’s a tiny amount of astringency. The oak just keeps on going long after the dram is finished. The rye note is still detectable almost as a white noise in the space behind the oak.

This straight bourbon used to have a 7 YO age statement but now the age varies from 5-7 years. The mashbill consists of 75 % corn, 13 % rye and 12 % barley.

Woodford Reserve Distiller`s Select

Tasting notes
Nose: This is sweet and fruity. Vanilla cream, green apples and honey sit on top of a sweet corn base. A hint of nail polish remover creates a thin outer layer. The core consists of a whiff of smoke and slightly nutty oak. After a few seconds in the glass it becomes a little bit dusty and marzipan starts to appear somewhere near the middle. This is quite pleasant on the nose.

Mouth: A mild butterscotch note develops and sits as a base as other flavours emerge. Apples and cherries and anise are the main flavours that come up. It’s quite dry and slightly astringent. The oakiness comes early and bring a bitter tang to an otherwise very sweet whole. The dust and corn notes are still in the mix. The vanilla is not as pronounced as on the nose and the honey sweetness has subsided and it’s now replaced by brown sugar. The thin layer of nail polish remover remains.

Finish: Peppermint and cherries swiftly pass by and get replaced by vanilla, honey and butterscotch. Anise and a thin note of lemon comes through before a dry toasted oak takes over. The fruitiness with green apples and cherries returns and sits on top of the oakiness all the way through the finish. The oakiness stays quite mellow and the whole thing feels very well balanced all the way through. This is a tasty, easy sipper.

Additional information
This bourbon is made in pot stills. It’s aged for about 6-7 years in barrels with level 4 charring. It has a mash bill that consists of 72 % corn, 18 % rye and 10 % barley. It was first released in 1996.

Bulleit 95 Rye – Frontier Whiskey

Tasting notes
Nose: This is black pepper and candy cane. There’s pine and a hint of basil. It’s herbal and grassy. There’s also a vanilla sweetness and a hint of oak peeking through. After opening up in the glass the whole thing turns to dill pickle juice.

Mouth: The pine and the dill pickle juice are dominant. There’s spicy flavours such as mustard and anis, and a fruitiness with some green grapes and apples. When the oak arrives it’s very dry and astringent. It’s still herbal and grassy and the vanilla is hanging on. A feint sour lemon note hides in the background and comes forward after a few sips.

Finish: The pine note is prominent with the green grapes and apples now accompanied by a honey sweetness. It’s still grassy and peppery, but soon a very heavy oak note takes over everything. It turns very astringent and now it tastes like dry soil and weathered oak. After a second or two the dill pickle juice returns and keeps the oak company all the way to the finish line. The mustard spicyness builds up in the end.

Additional information
This rye is aged for around 6 years. The mashbill contains 95 % rye and 5 % malted barley. It’s stated that it’s sourced whisky from MGP in Indiana.

Larceny Small Batch

Tasting notes
Nose: This is fruity and sweet. At first there’s a a protruding note of nail polish remover and hard fruit candy. When it settles a vanilla and dusty corn sweetness takes over and sort of flattens the whole thing into one layer. There are hints of green apples and liqueur-soaked cherries. The high wheat makes it bright and shiny and gives it a slight metallic note. A small whiff of cinnamon comes and goes. This is an okey and quite simple nose.

Mouth: It starts out sweet with a fruity kernel. It’s slightly dry and a vanilla oakiness is creating an outer layer surrounding the fruity center part. It’s somewhat chalky and there’s still a shiny metallic note. There’s also a cinnamon note which gives it a nice and warm character. There is a sort of umami savory note somewhere in the middle which is unusual to find in a bourbon.

Finish: It starts out by creating a thin layer of the metallic note on all sides and then a spicy touch with cinnamon and spicy oak builds up over time. There’s still some dusty corn and the fruitiness returns with the same green apples and cherries as before. When the oakiness starts to take over it’s still covered in vanilla. The sweetness is now represented by a honey note. The oak inherits the dusty notes from the corn. When all else start to fade away, the metallic still lingers and covers the palate. This is an okey bourbon and an easy sipper.

This is a wheated straight bourbon produced by Heaven Hill. The mash bill is made up from 75 % corn, 20 % wheat and 5 % barley. A batch consists of 100 barrels.

Buffalo Trace Kentucky Straight Bourbon Whiskey

Tasting notes
Nose: This is vanilla and brown sugar. After a few seconds the sweetness is joined by a hint of seashore and some salted caramel. There’s cinnamon and a fruit candy note, but they are sitting behind the sweetness. The oak is sitting even further back creating a nice backdrop. A thin veil of menthol lays on top of all the other flavours. It’s a very subtle and laid back nose.

Mouth: It starts out mild and somewhat salty. A nice fruitiness with apples and cherries comes through and takes over. There’s a pine note sitting somewhere in the middle bringing it down a little. Sweet liquorice and vanilla are slowly moving forward and creates a bridge over to the oak. It’s a nice oakiness but it never really pushes through.

Finish: A small burst of mint is followed by the fruitiness, again with apples and cherries. Vanilla, sweet liquorice and brown sugar fills the palate before the oakiness comes through. It’s a dusty, dry oak with a tiny astringency and a chalky texture. This is a very easy, well-rounded and balanced sipper.

Additional information
This is made from Buffalo Trace’s mash bill #1, which is believed to be a low rye one, but they don’t disclose the proportions. It’s said to be aged between 8-10 years. The proof varies between countries.

Heaven Hill Old Style Bourbon

Tasting notes
Nose: This is very mild and sweet. The first thing to come through is a dusty layer. It sits on top of a mix of brown sugar, cinnamon and cherries. There’s an immidiate oakiness that really comes through from the start. Vanilla resides in the back and a caramel note sort of comes and goes. This is a sweet, low-proof, standard bourbon.

Mouth: It’s very watery. A tiny touch of spicyness sits alone before a bitter note is first to break the silence. When the other flavours arrive, they’re not as sweet as on the nose and it becomes a bit astringent and dry. The oakiness is really coming through hard and the sweet and fruity notes are taking a step back. The cinnamon is also less prominent but still noticable.

Finish: A small peppermint freshness pass by before the bitter note returns. The oakiness is now up front and the whole thing is even less sweet than before. A swift visit from the sweetness and fruitiness do occur, but the very pronounced, dry oakiness returns and takes over again. It becomes very chalky in the late finish. This really lacks some power. It seems like it should be a good recommendation for people who want to get into bourbon.

Tasting notes
Nose: This is sweet and very fruity. There are cherries and green apples drizzled with cinnamon, honey and vanilla. A layer of peppermint and nail polish remover sits on top of the sweet and fruity center. There’s also an earthy side to it with some dry soil and dust. A nice toffee sweetness starts to come through after some time in the glass as well as a newly cut oak note.

Mouth: It starts out mild for a second or two, then a peppery spicyness comes rusning in. It never really moves all the way to the front though, it just sort of stops and makes way for all the other flavours. The cherries, apples and honey really stand out as well as the earthy dry soil note. A lightly bitter oak note starts to make itself noticed after a while but it stays as an outer layer surrounding the fruity, sweet center.

Finish: A eucalyptus freshness and a peppery note together create the feeling of a breath mint before the sweetness kicks in. It’s very fruity and it still has a layer of dry soil in the back. When the oak takes over it brings a big a nice vanilla note as well. It’s a very fresh oakiness with almost no astringency to it, even after a few sips. This makes it a very easy sipper and it’s easy to go back for another dram.

This straight bourbon is double distilled and aged up to 6,5 years in new american oak barrels with a number 3 char. The mash bill is made up from 70 % corn, 16 % wheat and 14 % barley. The barrels are rotated during the aging process.

Tasting notes
Nose: This is liquid candy cane. At first there’s a minty cloud sitting on top of vanilla and liquorice. In the background there is a dusty oak note. There is a honey sweetness and a vague hint of cherries. After a few minutes a hint of cinnamon emerges and mixes with the mint. This is a very pleasant nose.

Mouth: It starts out with a bitterness and a honey sweetness. The candy cane is gone and it’s much more leaning towards anis, liquorice and kitchen spices. The vague cherry note moves forward after a few seconds, but never creates a fruity experience. There’s almost a medicinal side to it and it’s very different from the nose.

Finish: A cloud of peppermint goes by and when it settles a bitter oakiness immidiatly takes over. The peppermint stays in the back throughout the finish. It’s still got a herbal character with kitchen spices and anis. The thin fruity cherry note arrives in the late finish together with the oakiness. The finish is not sweet at all and it becomes slightly astringent in the end. This is a great bourbon with an interesting journey from nose to finish.

This straight bourbon is aged for a minimum of 8 years. The bottle is filled from barrel 4-1H stored in warehouse LE. The mashbill consists of 60 % corn, 35 % rye and 5 % barley.

Tasting notes
Nose: This is milk chocolate and dusty corn. At first, the dusty corn and vanilla powder take up the main part of the nose. When it settles a milk chocolate note starts to create an outer layer. Then cherries, together with a hint of nail polish remover, start to compete with the corn and vanilla in the center. There is a Brown sugar sweetness and the fresh oakiness is creating a nice foundation. After some time in the glass the rye notes come alive and anise and black liquorice comes through. This is a mild and pleasant nose.

Mouth: It starts out vanilla sweet and it takes a while before the dusty corn returns. It’s less fruity than on the nose and the chocolate and nail polish remover is gone. The oak is still fresh, but the whole thing becomes slightly astringent. The anise note slowly but steadily increase with time in the mouth. The sweetness is now leaning more towards honey.

Finish: It’s a very mild and sweet start. The flavours almost immidiatley move aside to give room for the oak. The dusty corn, vanilla and the cherries return and create an overlay to the oakiness. The oak is very fresh and it seems to pick up the rye notes somewhere along the way and in the late finish there’s anise and black liquorice tagging along. This is a very easy sipper. It’s a bit too sweet at times, and it could do with a bigger impact.

This is a mix of 4 out of the 10 recipies used by Four Roses. There’s 2 yeast strains and 2 mashbills used to create the variety. 2 of the mashbills contain 75 % corn, 20 % rye and 5 % barley, and the other 2 contain 60 % corn, 35 % rye and 5 % barley. It’s aged for at least 5 years.
