Tasting notes
Nose: Green apples, chalk, nail polish remover, honey, anis (or maybe liquorice root) and a hint of vanilla. The rye note really shines through.
Mouth: Honey, vanilla, cherries, cinnamon, oak, cooking spices and anis. A hint of caramel lurks in the background.
Finish: Spicy with cinnamon and honey. The oak is dry with some astringency. Rye flavour is dominant through and through with anis and liquorice at the forefront. A nice collection of assorted nuts can be found within the lingering oak flavour.
Additional information
This bourbon is aged between 2-5 years. Each batch yields 3 barrels. It’s made from 60 % local Colorado sweet corn, 20 % rye and 20 % malted barley.
